If you're a big fan of kakanin like me, for sure you will like this native delicacy Sabalangko that usually serve during fiestas or special occasion in my hometown in Bulacan. In this recipe i used cornstarch, fresh milk, condenced milk, coconut milk and sugar with thick coconut curd ( latik ) cream topping.
INGREDIENTS:
For Latik
- 1 can ( 400ml ) or 2 cups coconut cream ( kakang gata )
For Sabalangko:
- 1 cup fresh milk , you can use evaporated milk or carabao's milk
- 1 cup cornstarch
- 3 cup fresh milk, you can use evaporated milk or carabao's milk
- 1 1/4 cup coconut milk
- 1/2 cup condensed milk
- 5 to 6 tbsp sugar ( adjust according to your taste )
For topping:
- coconut curd ( latik )
- 2 tbsp sugar
- 4 to 5 scoops sabalangko mixture
* * To take it out of the llanera just allow first the sabalangko to cool down much better if you refrigerate it to chill before unmolding. Run a well grease knife around the inner edges turn the sabalangko over on a serving plate and place another serving plate on top and turn it again.
