Gongura Chicken Recipe is one of the popular Andhra special recipes especially served in Guntur and Vijayawada restaurants. It is one of the tangy and spicy recipes made by adding red sorrel leaves.
Tips to make perfect Gongura Chicken Recipe:
• Using Kashmiri red chilli powder gives you eye compelling spicy recipe
• Slice red sorrel leaves into small pieces so that it cooks faster.
• Add sorrel leaves only when chicken is semi-cooked or else it takes time to cook because of sourness present in leaves.
• Sometimes red sorrel leaves taste sour than expected and make the whole recipe sour in such a situation we can reduce its sourness by adding a pinch of soda.
• If you love to have creamy gravy, we can even add poppy seed paste which not only elevates flavour but also balances sourness.
• Based on the number of sorrel leaves and their sourness we adjust tomatoes.
Ingredients:
Chicken – 1 ½ kg
Gongura/ red sorrel leaves – 1 bowl
Oil – 5 tbsp.
Cinnamon sticks – 4 No.
Cloves – 8 No.
Green cardamoms – 4 No.
Cumin seeds – ½ tbsp.
Bay leaves – 2 No.
Onions – 1 bowl
Green chillies – 5 No.
Ginger garlic paste – 2 tbsp.
Tomatoes – 1 bowl
Turmeric powder – ¾ tbsp.
Kashmiri red chilli powder – 2 ½ tbsp.
Salt - 2 ½ tbsp.
Coriander powder – 1 tbsp.
