Banh Mi Kebabs 🍗🫚
These Banh Mi Skewers put a fun twist to a Vietnamese-inspired dish! My goal was to take influence from another country and apply it to the Western culture of grilling outdoors for the Fourth of July holiday. This idea was inspired by Justin Sullivan of @delish. Ingredients:
-2lbs chicken thighs, cubed
-4 large carrots, cut into 1” chunks
-1 large daikon radish or parsnip, cut into 1” chunks
-1/4 cup soy sauce
-3 tbs honey
-2 tbs fish sauce
-2 limes, freshly squeezed
-2 tbs ginger, minced
-1 bunch of cilantro, freshly chopped
Instructions:
-add the chunks of chicken to a large bowl
-add soy sauce, honey, fish sauce, ginger, cilantro, and lime juice
-mix well
-cover and marinate in fridge for 4-6 hours
-steam or boil carrot chunks for 4-6 minutes until slightly tender
-soak wooden skewers in water for 1 hour to prevent burning
-place chicken, carrot, and radish/parsnip on skewer, alternating each until skewer is full
-grill on medium high heat (~350F) for 8-10 minutes, flipping over after 4-5 minutes
-remove from heat and garnish with cilantro and fresh lime juice
