IT'S CHRISTMASSSS! Ahh I am so excited for Christmas, so I thought I would kick things off with this amazing chocolate yule log recipe! This is an absolutely showstopper that is actually super easy to make and i KNOW it will look great in your house this Christmas. So if you are looking for christmas recipe ideas, then this chocolate yule log is perfect for you!
To make this chocolate yule log you will need:
Cake:
250g Double Cream (Heavy Cream)
225g 70% Dark Chocolate
250g Egg Whites
40g Caster Sugar
Filling:
500ml Double Cream
Fresh Raspberries
1 Tsp Sugar
1 Tsp Vanilla
Chocolate Glaze:
250g Water
440g Caster sugar
175g Double Cream (Heavy Cream)
110g Cocoa Powder
18g Platinum Leaf Gelatin Sheets
To make the twigs on top - melt 100g of 70% chocolate over a bain marie very slowly, until it reaches a temperature of 47C on a digital thermometer. As soon as it hits 47C, take it off the heat and place the bowl on a tea towel. Add a big block of chocolate, about 50G, and stir gently until the temperature drops to 31C. As soon as it hits 31C, remove any remaining chocolate lumps and add the mixture into a piping bag. Pipe the mixture in twig like shapes onto a bed of cocoa powder (i just coated a plate in a thick layer of cocoa powder). Place the twigs in the fridge until you are ready to use them.
