Here's a simplified version of the popular and classic Kadai Chicken
KADAI CHICKEN
Ingredients
400 grams boneless chicken, cut into 2 inch cubes
2 tbsps kadai masala powder
3 tbsps oil
1 tsp cumin seeds
2 medium onion, chopped
1 tbsp ginger-garlic paste
1 large tomato, chopped
2 tsps red chilli powder
1 tsp coriander powder
½ tsp turmeric powder
½ tsp garam masala powder
Salt to taste
2 tbsps cashew nut paste
½ tsp dried fenugreek leaves powder
1 medium onion, diced and layers separated
1 small capsicum, diced and layers separated
1 medium tomato, deseeded and diced
½ lemon
1 tbsp freshly chopped coriander leaves
Coriander sprig for garnish
Method
1. Heat oil in a kadai, add cumin seeds and let the seeds change colour. Add chopped onion and sauté till golden brown in colour.
2. Add ginger-garlic paste, mix well and cook for 1 minute. Add chopped tomato and mix well. Cook till the mixture is soft and pulpy.
3. Add red chilli powder, coriander powder, turmeric powder, garam masala powder, salt, and ½ cup water, mix well and cook for 3-4 minutes.
4. Add chicken, kadai masala powder and mix well. Add cashew nut paste, mix well and cook for 8-10 minutes.
5. Add dried fenugreek leaves powder and mix well. Add diced onion, diced capsicum and diced tomato, mix well and cook for 3-4 minutes.
6. Squeeze lemon and add chopped coriander, mix well and cook for 2-3 minutes. Take it off the heat.
7. Garnish with coriander sprig and serve hot.
