Vegetable Jalfreji made in the instant pot !
This recipe is loaded with colourful veggies,paneer,Indian spices and all cooked together in a tangy tomato sauce.
The word Jalfreji originated from the local eateries of West Bengal , India . It means a stir fry of vegetables in sweet and tangy gravy .
Veg Jalfrezi can be thought as a mix of Chinese and south Asian cooking techniques . The resulting air fried veggie combination is thus delicious , crunchy and unique in taste .
The most important ingredient in mixed veg jalfrezi is a generous amount of green chillies which are cooked in tomato base to prepare a spicy sauce . Onions can also be added to the gravy to give it more bulk .
Ingredients
1.2 tbsp butter
2.1 onion diced
3.1/2 cup beans
4.1/2 cup carrot
5. 1/2 cup baby corn
6.1/2 cup red bell pepper
7.1/2 cup yellow bell pepper
8. 1/2 cup green capsicum
9.1/2 cup tomato sliced
10. 1 cup paneer
For gravy
1. 2 tbsp oil
2. 1. Tsp cumin
3. 1 tbsp garlic
4. 1 tbsp ginger
5. 3 red chillies
6. 1 cup onion finely chopped
7. 1 cup tomatoes finely chopped
8. 1/2 cup tomato purée
9. 2 tbsp tomato sauce
10. 1 tsp turmeric
11. 1 tsp red pepper
12. 1 tsp coriander powder
13. 1 tsp salt
14. 1 tsp garam masala
15. Coriander leaves
