Here's a great Vanilla Sponge cake that is great as a tea cake or to use with any frostings / toppings of your choice. Its a 'must have' recipe in your repertoire.
Ingredients -
250g butter, at room temperature
250g sugar (Use either a really fine grain or powder your sugar in a dry grinder before using)
250 all purpose flour
4 eggs
1 tsp vanilla extract / vanilla bean paste
1 tsp baking powder
