Slow braised pork belly is one dish I've been cooking for over 20 years, and ate by family and friends from 5 to 95. The slow braising would cook most of the fat out leaving gelatin like texture that can melt in you mouth. It perfectly mixed in with the tender lean meat when you take a full bite. The sweet and savory flavor provide home comfort during cold days.
The sauce which contains a layer of lard can be repurposed for other dishes, or simply mixed with rice or noddle.
Ingredients:
2 lb pork belly (with skin)
5-6 slices of ginger
3 star anise
3 bay leaf
1 Chinese cinnamon stick
2.5 oz (75g) of rock (crystal) sugar cube
1-1.5 Tbsp of dark soy sauce
1 Tbsp of regular soy sauce
1-1.5 cup of Chinese cooking wine
1-2 scallion
