So when I want a comforting, cozy dinner for my family, that means it's a grilled cheese and tomato soup night. If you've always had tomato soup from a can, you'll be amazed at how easy it is to make it yourself.

Ingredients
4 tablespoons heavy cream
8 slices sandwich bread
4 ounce cheddar, grated (1 1/3 cups)
Store-bought pesto
4 teaspoons extra-virgin olive oil
1 medium yellow onion
4 small garlic cloves
Coarse salt and ground pepper
2 cans (28 ounces each) whole peeled tomatoes in juice
1 cup low-sodium chicken stock, vegetable stock, or water
Unsalted butter
