While Swedish meatballs may be better-known, this Danish-style minced meat dish is a popular classic throughout Scandinavia and Germany.
Frikadeller recipe from Grethe Petersen:
1 lb. ground pork (15-20% fat content)
1 tsp salt
Dash of red pepper
Dash of allspice
2 Tbsp flour
2 Tbsp unseasoned bread crumbs
½ tsp pepper
2 small eggs
1/3 cup club soda
1/3 cup cream or milk
1 small shredded onion, approx. 3 Tbsp
Form into oblong meatballs with a spoon – dip the spoon in water to prevent sticking. Melt butter in a large skillet until light brown, with a drop or two of oil to prevent the butter from burning. Fry meatballs at low heat for 5-7 minutes. Turn over, brown and fry the other side.
