Ingredients:-
For Poori/Puri:-
3 cups Wheat Flour
2 tbsp. Semolina
Salt to taste
Oil for frying
For Bhaji:-
1 kg. potatoes boiled, peeled and cubed into 1” pieces
2 tbsp. Oil
A pinch of asafoetida
1 tsp Mustard Seeds
5-6 green chillies, slit
¾ tsp. Turmeric powder
Few Curry leaves
Juice of 1 lemon
Salt to taste
½ cup freshly chopped coriander leaves
Method:-
The Puri/Poori:-
1. Mix the wheat flour, semolina and salt together and knead to a hard dough with the required amount of water to make the puri dough.
2. Heat the oil in a kadai.
3. Make small balls of the dough, the size of a little bigger than a 2 rupee coin and with the help of a rolling pin, roll a little thick puri around 3” in diameter.
4. Deep fry these puris in hot oil until slightly brown and fluffed up.
5. Serve hot with potato bhaji.
6. These puffed poories serve 4 people.
The Bhaji:-
1. Heat oil and add asafoetida and mustard seeds. Once the mustard seeds crackle, add chillies, curry leaves, turmeric and salt.
2. Add the boiled and cubed potatoes and stir the mixture well. See to it that the potatoes are coated well with the masala.
3. Add the lemon juice and stir again.
4. Cover and cook for 5 minutes on a low flame stirring occasionally and see that the potatoes do not get burnt.
5. Garnish with coriander and serve hot with hot puris.
6. This potato sabzi serves 5 people.
