Khajoor/Lauz from MaimoonaYasmeen’s Recipes
Ingredients: 200 ml cup is used here
Maida/Allpurpose flour : 200 grams or 1 1/2 cup
Rawa/Suji/Semolina : 100 grams
Shakar/Sugar: 200 grams
Kaju/Cashews: 5o grams (powder)
Elaichi/Cardamom powder: 1 ½ teaspoon
Saunf sabuth/Fennel seeds: 2 tablespoons
Asli Ghee/Clarified butter : 1 tablespoon
Doodh/Milk: ½ cup
Khane ka Soda/Baking soda: 1/4th teaspoon
Procedure:
1. Bade se bowl mein maida, rawa, pisi hui shakar, pise hue kaju, elaichi powder, saunf aur asli ghee daliye.
2. Milate waqt thoda sa doodh/milk dalte jaiyye warna iska aata patla ho jayega. (mai ne yahan 1/2 cup doodh dala hai).
3. Aate ko achhi tarah se ghat/hard goondh lijjiye, agar aata patla hai tab aap is mein thoda sa maida mila sakte hain.
4. Narm ya soft khajoor ke liye doodh ke bajaye aap ek anda/egg dal sakte hain aur milakar dekhiye agar doodh ki zaroorat ho tab 1-2 tbsp doodh daliye.
5. Dhakkan dhak dijiye aur adhe ghante/30 min ke liye ise rakh dijiye.
6. Adha ghanta baad, 1/4th tsp khane ka soda daliye aur mila lijiye. Soda aap aata milate waqt bhi doosre ingredients ke saath daal sakte hain.
7. Aata ghonndhne ke liye aap thode se qushk maide ka istemal kar sakte hain.
8. Aate ko do hisson mein baant dijiye.
9. Ek hissa lekar iski gol aur moti roti bel liiye. Square/chowkoni roti bhi aap bel sakte hain.
10. Belte waqt aap qushk maide ka istemal kijiye.
11. Chhuri ya knife ko paani se ya tel se geela kar lijiye aur isse diamond shape ke khajoor cut kar lijiye.
12. Doosre hisse ki bhi roti bel kar inke khajoor bana lijiye.
13. Talne ke liye tel daliye.
14. Jab tel garam ho jaaye, khajoor ko ehtiyat se is mein dalte jaiyye.
15. Jab ek taraf yeh achhi tarah se tale jaayen, tab hi paltaiyye warna yeh khajoor toot jjayenge.
16. Dono taraf brown rang ke hone tak inhe tal lijiye aur nikal lijiye.
Khajoor ya Lauz tayyar hain. Thanda hone par inhe airtight container mein nikal liiye aur taqreeban teen se chaar hafte tak istemal kijiye.
Note : Ek cup ya taqreeban ek sau assi se do sau graam pisi hui shakar daliye, mai ne jo shakar istemal ki hai, yeh bilkul zaiqe ke hisab se hai, lekin bahot ehtiyat karne sehi lauz nahi tootenge, is liye aap shakar ki miqdar kum kar sakte hain.
