The sniffer was the minecraft live 2022 mob vote winner and was added in minecraft 1.20 the trails and tales update. To get a sniffer, you need to take a brush to warm ocean ruins in the warm ocean biomes, the brush is a minecraft archeology feature you can craft with a stick, a copper ignot and a feather. In the warm ocean ruins you will find suspicious sand, which you can brush away to obtain different items including pottery shards! There is a 1 in 15 chance of you finding a sniffer egg. You can get a snifflet to hatch from a sniffer egg after 10 minutes if you place the sniffer egg on top of a moss block, if you place it on any other type of block it will take 20 minutes. The baby sniffer (snifflet) will grow up into a sniffer after 20 minutes. Once you have two sniffers you can breed the sniffer using torchflower seeds, which will give you a new sniffer egg that you can hatch!
