Blueberry Cinnamon Rolls with Lemon Cream Cheese Frosting
Dough
½ cup water
¼ cup milk
2 ½ butter
1T yeast
2 ½ to 2 ¾ cups flour
3T sugar, divided (you'll use 1t to help activate the yeast)
1t salt
1 egg, at room temperature
Filling
2T butter
¼ cup brown sugar
1 generous cup fresh blueberries
Frosting
2oz cream cheese, room temperature
1T butter, room temperature
1 ½ t lemon juice
¼ t vanilla
¼ t lemon extract
1 ¼ cups powdered sugar
Begin by combining water, milk & butter in a small measuring cup. Microwave until butter melts and mixture is about 110 degrees. Pour into a medium size mixing bowl. Sprinkle with The yeast and about 1t of the sugar. Mix this up and let it sit for 10 minutes until the yeast is bubbly.
Add 2 cups of the flour, the rest of the sugar, the salt and the egg. Mix this with a large spoon until it is to stiff to mix. Put on counter top sprinkled with a little of the remaining flour.
Knead dough (by hand) to combine in the flour. The dough should not be sticky but soft and smooth. Add only enough of the remaining flour necessary to achieve a soft smooth dough.
Now knead dough for about 10 minutes.
Drizzle a little oil in a bowl. Roll the dough around in the oil. Cover with a dish towel, set in a warm place and let rise for about 45 minutes to an hour or until the dough has doubled in size.
When the rise time is up punch dough down, knead a few time to release any air bubbles. Roll dough in to 14x8 inch rectangle (approx size).
For the filling, spread butter over rectangle. Sprinkle brown sugar on top. Sprinkle blueberries evenly over it all. Slightly press berries into dough so they don't roll around as you are rolling the dough.
Roll, lengthwise and pinch long side to seal.
Cut into 8 pieces.
Line a 9inch pie plate with parchment paper and spray a little non stick spray around sides of pan.
Evenly lay the 8 cinnamon rolls on the plate.
Cover with a towel and let rise in a warm place for 30 to 45 minutes or until the double in size.
When they have almost doubled in size preheat your oven to 375 degrees. When they are ready bake for 25 to 30 minutes until golden brown.
While the cinnamon rolls are baking make the frosting: In a mixing bowl combine cream cheese, lemon juice, vanilla, lemon extract and butter. With a hand mixer beat until smooth. Add and 1 cup of the powdered sugar. Mix until smooth and adding remaining powdered sugar until you have a fairly thick and spreadable frosting.
When the rolls come out of the oven frost immediately.
All to cool, serve and enjoy!
