This Russian/Ukrainian dessert has been around for decades and is very popular for weddings/birthdays or any gathering for that matter. It is SO easy to put together with just a few ingredients. Although it has minimal ingredients, everyone's almost always turn out differently. I'm going to show you my version.
You will need:
1 package of Russian wafers- you can find these in most European food stores or even online
1 can Dulce de leche
1 stick of salted butter (room temperature)- I always use salted
With a hand mixer- combine the dulce de leche and butter until smooth.
Apply cream to each layer, making sure to fill each little square. Be generous- but not too much.
The cream should be enough to complete a package of wafers. If not- I save the rest for another cake.
Once you are done- this next step is also important. I place the cake on a cutting board, add another cutting board on top and but something heavy to weight it down slightly. (my pot in this video was filled half way with water) Leave the weight on the cake for at least an hour-or you can do it longer if you're not using it right away.
When ready to use, cut it vertically, then cut it at an angle to get the diamond shape and you are ready to enjoy them.
If you follow this process, they will turn out moist and melt in your mouth every time!
I get compliments on my wafers all the time and these are my husband's favorite. I usually make 2 because they disappear quickly.
