Ingredients:
Rice Flour - 1 Cup
Thick Poha or Avalakki or Beaten Rice - 3/4 Cup
Roasted Bengal Gram or Putani - 1/2 Cup
Crushed Cumin Seeds / Jeera - 1 tsp
Sesame Seeds - 2 tsp
Turmeric Powder - 1/2 tsp
Red Chilli Powder - 2 tsp
Butter - 4 Tbsp
Salt Oil - For deep frying
Method:
To a small mixer jar, add 1/2 Cup Roasted Bengal Gram and grind to a fine powder. Transfer to a bowl.
To the same mixer jar, add 3/4 Cup Thick Beaten Rice and grind to a fine powder and then transfer to a bowl.
Add 1 Cup Rice Flour to a mixing bowl. Sieve directly the ground powder of Roasted Bengal Gram and Thick Beaten Rice. If any residue is left in the siever, discard it or use it for dosa.
Add 1 tsp crushed Cumin Seeds, 2 tsp Sesame Seeds, 1/2 tsp Turmeric Powder, 2 tsp Red Chilli Powder and Salt and mix everything once with a spoon.
In a small frying pan, add 4 Tbsp of Butter and melt the same. Add immediately melted Butter to the flour mixture and mix once with the help of a spoon.
Once the flour mixture becomes warm, mix well with the help of your hand. Next, slowly add water to the flour mixture and knead well and prepare slightly soft dough. Close the dough and keep aside.
Take a Chakli plate and fix the same to the Chakli press. Smear little oil on the sides of the Chakli press, fill the Chakli dough and close the press.
On a plastic sheet, press the dough into a Chakli shape. Prepare 4-5 at once.
Heat Oil in a pan. Once Oil turns hot, slowly drop the pressed Chakli one by one. Fry 4 or 5 at once and fry till the Oil sizzling sound stops. Be careful not to over fry the Chakli as it can turn brown spoiling the taste. Fry only till as you see in the video since Chakli will acquire color after removing from hot oil since when it is hot.
Once done, transfer to a strainer to remove excess oil. Repeat the same process.
Allow Avalakki Chakli to cool completely. Now transfer the Chakli to an airtight container and can store up to 20 days. Quality cooking wares that I love and recommend. Many of these I use every day in my kitchen and in the videos as well. Thank you.
