Almost any fish can be used for fish stock, and the great thing is you can use inexpensive fish parts that your fishmonger might otherwise discard.
If you prefer a more concentrated flavour, simply return the stock to the pan after straining, and then simmer for anywhere from 30 minutes to a few hours till the stock is reduced to your liking.
