How to eat more greens? Just add them to your pasta dough!
In this video I will show you how to make spinach green pasta dough from scratch. With natural ingredients only!
To obtain green pasta colour you can use blanched greens like in this video, or fresh ones - check out my latest video where you can learn how to make pasta with fresh rocket [ Ссылка ].
Blanche your greens, use 8 cups of hot salty water with 1 teaspoon of baking soda and soak for 15 seconds. Drain all the water, squeeze a little to drain some more and blend with an egg. Then, combine with flour and knead for 5-10 minutes. You can always add water if the dough is too dry but it doesn’t happen a lot. When the dough is smooth, wrap it in plastic foil and let it rest for 30 minutes in room temperature. After that you can start rolling out your pasta dough in any shape you want!

- 120g AP flour or tipo 00,
- 1 egg,
- 2 cups of fresh spinach,
- 1 teaspoon of salt
- 1 teaspoon of baking soda,
- 8 cups of water for blanching the spinach.
