Easy Crepe Recipe
Ingredients:
1 and 1/2 cups (180g) flour
2 cups (480ml) milk
4 eggs
2 tablespoons sugar
1/4 teaspoon fine salt
3 tablespoons (45ml) oil plus more for frying
Instructions:
In a large mixing bowl whisk together sifted flour and salt.
In a separate bowl, beat eggs with sugar. Do not overwork them, the eggs should not become frothy. Add oil and milk, mix.
Add wet ingredients gradually to flour, mix well until all the lumps are gone. Do not be afraid to overbeat the batter, the more you mix it, the better, all that gluten will make your crepes stronger and less prone to tearing. If you still see some tiny lumps use a fine mesh sieve or a cheese cloth to strain the crepe batter.
Cover the batter and set aside to rest at the room temperature for about 20 minutes.
Heat a non-stick pan over medium heat, brush with just a few drops of oil.
Whisk the batter for a few seconds for better consistency. Add 1/4 cup batter while swirling the pan to coat the bottom.
If you feel like your batter still feels thick and the crepes as not thin, add a tablespoon or two of milk or water.
Flip the crepe when edges are golden and cook for another 30 seconds. #crêpes #creperecipe #налисники
