There's a fair bit of sugar that goes into this which I would like to find a way to avoid in the future but it does help to sweeten up the 400 grams or so of hot peppers that are called for. I guess I could always throw in some sweet pepper instead but that just doesn't feel right to me. I'm trying to figure out how to get even more heat into those hot pepper jellies we put into the cupboards ...
