Preheat oven to 160 Celcius / 320 Fahrenheit
To Activate the Yeast.
1 cup warm water
5 Tablespoons dry yeast
1 Tablespoon sugar
Dough
1 Kilo / 8 cups bread flour
2 teaspoons table salt
2 teaspoons baking powder
¾ -1 cup sugar depending on how sweet you want it
2 eggs
½ cup oil
Warm Water as needed if the dough is too dry
To activate the yeast, mix warm water, dry yeast and sugar together in a bowl and set to the side. Let sit for about 5 to 10 minutes or until the mixture get bubbly.
In a separate bowl, mix bread flour, salt, baking powder, and sugar into a bowl. Add 2 eggs, one whole egg and one egg white. Set the extra yolk to the side. Pour in oil and start mixing. You can use your hand or a standing mixer. As the dough is mixed you may need to add some more warm water if the dough is too dry. Once mixed, take the dough out of the bowl and put it on a floured surface. Knead dough for about 10 minutes until it is no longer sticky and has a springy texture.
Once dough is kneaded put in a wooden or plastic bowl and cover. Put in a warm place and let dough rise for about 1-2 hours.
When the dough has risen, take out of the bowl, knead a few more times and then cut the dough in half. Set half aside and take the other half and separate into three sections. Roll each of those sections into about foot long cords. Attach the cords at the top and then braid the cords together. Just as you would braid hair.
Once it is braided into a loaf, set on a cooking sheet that is covered with parchment paper, cover with a towel and let rise again for another 30 minutes.
After it has risen a second time, brush loaf with egg wash. Then place in a preheated oven for about 45 minutes to an hour.
