Paal Pongal Recipe:
Ghee - 2 tbsp + As Needed
Cashew Nuts (whole) - 10 nos
Rice - 1 Cup
Moong Dal - 2 tbsp
Water - 4 Cups
Milk - 1 ½ Cups
Salt - 1 tsp
Cooking Instructions:
1. Rinse and soak the rice for 20 mins.
2. Dry roast the moong dal until aromatic and wash it well.
3. Add the soaked rice and moong dal to a cooker with salt and water and pressure cook for 3 whistles, allow the steam to escape naturally.
4. Lightly mash the rice and dal mixture.
5. Place the mixture back on a low flame and add the milk in additions, mixing well in between.
6. Once all the milk has been blended in, switch off the flame.
7. In a separate pan, fry cashew nuts in ghee until golden brown.
8. Add the fried cashew nuts and the leftover ghee into the paal pongal, serve warm.
Cooking Tips:
1. Can be served with gothsu, kootu or sambar.
2. To make it sweet, add sugar and cardamom powder while adding the milk.
