There are 3 parts to make Pineapple bun : Water roux, Bread, Sugary top crust
[Water roux]: -20g Bread flour
-100ml Water (the ratio is 1:5)
[Bread]: - 350g Bread flour
-40g Sugar
-120ml Milk
-1 Water roux
-1 Egg
-6g Yeast
-4g Salt
-20g Unsalted butter
[Sugary top crust] -110g Sponge flour (sieved)
-10g Custard powder
-1g Bicarbonate of Soda
-60g Unsalted butter
-1/2 Egg
- 3g Baking powder
-50g Granulated Sugar
Steps:
1. [Water roux]Add bread flour and water into a pan over low heat .Stir until the mixture become thick slurry and set aside.
2. [Bread] Add all the dried ingredients and mix well. Then add egg, milk and water roux and mix well.
3. knead the dough for 10-15 minutes then add butter into the dough.
4. Shape the dough into a ball and place it into a large bowl and cover it with cling film, Let the dough rise for 45 mins/ until the dough doubles in size.
5. Divide the dough into 10 equal pieces , shape it into ball and rise for another 45 mins
6. [Sugary top crust] Add all ingredients into a bowl mix well. Chill it fridge for 1hour.
7. Preheat the oven to 180 °C
8. Divide the sugary top crust into 10 equal slices.
9. Brush the top of the bread with egg wash then cover each bun with the sugary top crust and brush the top of the crust.
10. Bake them for 13 mins until the browned on top.

【湯種】: - 20克高筋面粉麵粉
- 100毫升水 (比例是1比5)
【麵包】: - 350克 高筋麵粉
- 40克 糖
- 120毫升 牛奶
- 1 湯種
- 一隻雞蛋
- 6克 酵母
- 4克 鹽
- 20克 無鹽牛油
【菠蘿包皮】:- 110克 低筋麵粉
- 10克 吉士粉
- 1克 梳打粉
- 60克 無鹽牛油
- 半隻 蛋液
- 3克 泡打粉
- 50克 糖
