In this episode, Geoff demonstrates how to prepare char grilled lobster tails!!
This amazing dish can be served as an entree or main course, and it's an obvious "Wow" dish if you're looking to impress someone (or someoneS!)
You can cook on any char or gas bqq or on a pan and in your oven to finish. Just follow the same time and temp guide. Finishing on indirect heat is advisable on a char barbecue.
And yes... in the video I do say 3 minutes and 4 minutes and 3 minutes again when talking about the cook on the flesh side at different times. To be clear - it's 3-4 ISH minutes! Just get nice colour :)
For the butter, melt.....
1 stick butter (I use Lurpak)
2 cloves garlic finely crushed
1 tbs of finely minced parsley
1 tsp of finely minced fresh dill
Pinch salt and pepper
Optionally add a squeeze of half a lemon
Prep your BBQ to 200C or medium hot griddle pan.
Cook flesh side 3-4 mins until you get nice colour.
Cook 5-10 minutes on the shell side (indirect on char BBQ's) until you reach 57-58C internally in the thickest part. Baste several times wih butter on the flesh while it is cooking through.
My favourite way to serve is removed from the shell and sliced into perfect medallions as an entree on a pretty lettuce cup, drizzled with more garlic butter. Outstanding!
