INGREDIENTS:
170 g plain gluten free flour
1 tsp xanthan gum
1 medium egg
1 tsp water
110 g unsalted butter, (cubed)
Pinch salt
OPTIONAL:
1 tbsp caster sugar (for sweet pastry)
1 egg (beaten, for brushing pie tops)
This recipe also works really when substituting half of the butter for lard or Cookeen/Trex (veggie option) - it makes the pastry extra crumbly and delicious!
