Ingredients & Directions
Step 1
In large bowl, whisk together
2 cups vegetable oil
1 1/2 cup sugar
2 large eggs
Step 2
In separate small bowl, whisk together
1 tablespoon cocoa powder
1 cup buttermilk
1 teaspoon vanilla extract
1 tablespoon red food coloring
1 tablespoon white vinegar
Add this mixture to oil, sugar and eggs. Whisk together until thoroughly blended
In a third bowl, sift together. Add these dry ingredients to wet ingredients in two intervals. I whisk these together verses using a mixer. Do not over mix
2 1/2 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
Baking Instructions
Preheat oven to 350F for shiny pans. 325 for nonstick pans
Prepare 3, 6" or 8" cake pans.
Add two cups of batter to each cake pan.
For 8" pans bake 20-25 minutes. For 6" pans bake 25-30 minutes. Cake is done when inserted toothpick comes out clean.
Cool completely before frosting
Cream Cheese Frosting
1 stick butter, softened
1 8-ounce cream cheese, softened
3 cups powdered sugar
1 teaspoon vanilla extract
Mix ingredients at hight speed until creamy and fluffy.
Add one cup chopped pecans if desired
