To unlock Race 500 (aka Indy 500, aka Race), you just need to select all the items in the museum section for a second or two and once you have 100% completion in all five museum areas the game will unlock.

There are single player options as well as two player options and I found I was able to control the car okay with the Nintendo Switch stick controller.
