These latkes are above average in every way: crispy and light (never soggy or dense), deeply golden, and very, very savory. Naturally I have opinions on the ideal latke toppings (salmon roe + chives + sour cream for a savory-salty moment, homemade apple sauce + sour cream for a salty-sweet moment), but they’re also perfect as-is. Ideal to make this week (happy Hanukkah!), or any other time you find yourself wanting to throw a latke party (please invite me!).
