This quick recipe shows you how to make Spanish rice / Mexican rice in a rice cooker. While there are many recipes online, this one differs because it is oil-free, cholesterol-free, and fat free (The only fat is that naturally occurring in the ingredients.), vegetarian, and completely vegan.

♥ 2 cups long grain rice, washed and drained
♥ 2 cups water (broth or stock is better)
♥ 8 oz can tomato sauce
♥ 1 yellow onion
♥ 2 cloves garlic
♥ pinch dried oregano
♥ salt and pepper to taste (I used around ½ teaspoon salt)
*Amounts are approximate. Adjust a little here are there as needed.
