Ingredients:
For the crust:
15 oz - (425gr) grated zucchini
1 egg
1/3 cup shredded mozzarella cheese
1/4 tsp Italian seasoning
Salt and black pepper
For the toppings:
1 tsp olive oil
1 clove garlic, minced
4 oz - (113 gr) shrimp, peeled and deveined
1/2 tsp oregano
2oz (57gr) tomato sauce
1oz (28gr) corn
3 bell peppers, sliced
Grated mozzarella cheese
Instructions:
1. Preheat the oven to 400°F.
2. In a mixing bowl, combine the grated zucchini, egg, shredded mozzarella cheese, Italian seasoning, salt, and black pepper. Mix well to form a dough.
3. Line a baking sheet with parchment paper and spread the zucchini dough on it, using a spatula or your hands to shape it into a thin, even crust.
4. Bake the zucchini crust in the preheated oven for 10-12 minutes, or until it's lightly golden brown.
5. While the crust is baking, prepare the toppings. Heat the olive oil in a skillet over medium heat, then add the minced garlic and cook for 1-2 minutes, or until fragrant.
6. Add the shrimp to the skillet and cook for 2-3 minutes, or until they're pink and cooked through. Season with oregano and a pinch of salt.
7. Spread the tomato sauce over the zucchini crust, leaving about 1/2 inch of space around the edges.
8. Top the pizza with the cooked shrimp, corn, and sliced bell peppers.
9. Sprinkle grated mozzarella cheese over the toppings.
10. Bake the pizza in the preheated oven for an additional 10-12 minutes, or until the cheese is melted and bubbly.
11. Remove the pizza from the oven and let it cool for a few minutes before slicing and serving.
