MUSHROOM DO PYAZA
Ingredients
1 cup button mushrooms, quartered
1 medium onion, peeled and chopped
1 medium onion, peeled, cut into cubes and layers separated
2 tbsps oil
1 green chilli, slit + for garnish
1 tsp ginger paste
1 medium tomato, chopped
½ cup fresh tomato puree
¼ tsp turmeric powder
½ tsp red chilli powder
½ tsp garam masala powder
Salt to taste
1 medium green capsicum, seeded and cut into 1 inch cubes
1 tbsp fresh cream
1 tbsp chopped fresh coriander
Fresh coriander sprig for garnish
Laccha paranthe to serve
Method
1. Heat oil in a non-stick pan, add green chilli, green chilli, ginger paste and mix well. Add chopped onion and sauté till it turns golden brown.
2. Add tomato, mix and cook till pulpy. Add tomato puree and sauté for a minute. Add turmeric powder, red chilli powder, garam masala powder and salt and sauté for a minute.
3. Add ½ cup water and mix well. Cover and cook for 4-5 minutes. Add diced onion, capsicum and mushrooms and mix well. Cover and cook for 4-5 minutes.
4. Add fresh cream and chopped coriander and mix well. Cook for a few seconds and take the pan off the heat.
5. Transfer into a serving bowl and garnish with coriander sprig and slit green chilli. Serve hot with laccha paranthe.
