Chinese Chicken Radish Stew
Ingredients:
Boneless, skin-on chicken thigh 1 lb.
Ginger, thinly sliced 2 tsps
Garlic, chopped 1.5 Tbsp
Oyster sauce 2 Tbsps
Soy sauce 1.5 Tbsps
Chicken broth or water 2 cups
Rice wine 1.5 Tbsp
Daikon or Korean radish, cut 1/3” thick 0.75 lb
Chili pepper, sliced 1
Corn starch slurry 3 Tbsps
Salt to taste
White pepper to taste
Green onions, chopped 2
Steps:
Cut chicken thigh into bite size cubes.
Heat 1 Tbsp neutral oil in heavy-bottom pan on high.
Sauté chicken till golden.
Reduce heat to medium. Add ginger and garlic. Sauté till fragrant.
Add oyster sauce and soy sauce. Sauté for 2 minutes.
Add chicken broth or water. Add radish.
Bring to a boil. Cover and simmer for 25 minutes.
In a small bowl, make cornstarch slurry by mixing 1.5 Tbsp water with 1.5 Tbsp cornstarch. Mix till smooth.
Add chili pepper in pot. Drizzle cornstarch slurry and mix well. Stir constantly till stew is thicken.
Add salt and white pepper to taste if needed.
Garnish with green onions.
Serve hot with rice. Enjoy!
