Today I am making a Classic French Tart, Summer Berry Galette using fresh Strawberries and Blueberries!
It is like a Pie but it is Rustic and Delicate, you can add any type of Fruit, Peaches, Plums, Raspberries, Blackberries, etc.
Simple and Easy and full of fresh Berry Goodness; perfect Summer Dessert for your BBQ Cookouts, Picnics, Potlucks, and for your 4th of July Menu!!!

Ellen’s Homemade Pie Crust Recipe: [ Ссылка ]
3 cups fresh sliced strawberries and blueberries, rinced (1 pint of strawberries and 1 pint of blueberries to make 3 cups in total)
1 1/2 tsp freshly squeezed lemon juice
1 tsp pure vanilla extract
1/2 tsp pure strawberry extract
2 tbsp white sugar
1 1/2 tbsp cornstarch
Pinch salt
1/4 cup strawberry preserves or jam (you can also use blueberry preserves or jam)
1 chilled single pie crust, homemade or refrigerated
Egg wash:
1 extra large or jumbo egg
1 tbsp water or milk
Butter chunks, optional
White sugar, for dusting
Whipped cream or vanilla ice cream, for serving (optional)
Preheat Oven to 400 Degrees
For the egg wash: In a small bowl, add the egg and water or milk; whisk until well combined. Set aside.
On a lightly floured work surface, add the pie crust and using a rolling pin, roll the dough into a 12-inch circle, moving the dough around frequency to prevent sticking. Roll the pie crust on a rolling pin and gently roll and place it on a 9x13 inch cookie sheet line with parchment paper. Set aside.
In a small bowl, add 2 tablespoons sugar, cornstarch, and salt; stir until well combined.
In a large bowl, add the strawberries, blueberries, lemon juice, vanilla extract, strawberry extract, and the cornstarch mixture; gently stir until well incorporated (it will create a glaze). Spread the strawberry preserves over the middle of the pie dough, leaving a thick border around the edges. Mound the berries over the preserves (don’t need the glaze from the berries). Fold the edges of the dough over the berries and pleat it every few inches. Brush the border of the galette with the egg wash then add the butter chunks on top of the dough and the berries (if using) then sprinkle with white sugar on top. Bake for 25-30 minutes until the crust is golden brown and the berry juice are bubbling. Check the underside of the galette is also brown. Remove from the oven and let it cool on a wire rack. Place the galette on a cake stand or platter. Cut into slices, serve with whipped cream or ice cream (if using), serve and enjoy!
