Siopao Dough Recipe
Tanzhong -10%
45 grams water
5 grams flour
*mix until flour has dissolve
*Cook in low heat until it turns into a paste
DOUGH
355 grams all purpose flour
150-155 grams Cake flour
1 tsp. Instant yeast (Mauripan)
2 tbsp. + 2 tsp. Baking powder
1/2 cup white sugar
1 tsp. Salt
210 ml. Water
1 tbsp. White vinegar
30 grams Power Mix shortening
*Combine all ingredients
*Knead until smooth.
*Portion the dough
*Fill with meat filling
*You can steamed it directly or rest for 30-40 minutes to proof.
*Steam for 10-12 minutes at High heat
