This rustic tart is super simple, easy and quick to make. The entire process takes no more than an hour. The amazing thing about galettes is that you can fill them with your favourite fruits or berries.
May we give you a few suggestions of fruits: pears 🍐, prunes, peaches 🍑, apricots, cherries 🍒, strawberries 🍓 , apples 🍎 or whatever fruit is in season.
Since it’s the Holidays and figs are in season, we will be making our DOUBLE layered fig galette with apricot and fig jam.
The best figs to bake with are those dark purply ones. They have a more intense flavour & hold up better when you bake, compared to the green figs, which are more delicate.
This fig galette is absolutely delicious and irresistible !
INGREDIENTS: DOUGH
1 1/2 cups (180 g) sifted A/P flour
1 stick (113 g) unsalted butter 🧈 (cubed & room temp)
1/2 block (125 g) cream cheese (cubed & room temp)
FILLING:
Approx. 24 purple figs
3-4 tbsp. fig jam
3-4 tbsp. apricot jam
1 egg (for egg wash, room temp)
Sprinkle of raw sugar
5-6 cold cubed unsalted butter
DIRECTIONS: Oven temperature 350F (180 C) Baking time: 30-35 minutes
1) Rinse figs under cold water. Dry with clean tea towel. Cut off the tips and the end. Slice into rounds. Set aside.
2) In a food processor, add flour, butter & cream cheese. Blend until the dough comes together. Remove dough. Form a dough ball with your hands. No need to refrigerate, as we will be rolling out the dough straightaway.
3) Roll out the dough into a round shape, making the outer part of the dough
a bit thinner, because the outer dough needs to be folded over.
4) Spread fig jam over the centre part of the dough. Layer some of the figs over the jam till the entire circumference is covered, then make another layer.
Spoon a few dollops of apricot jam. Spread over the entire layer of figs.
5) Fold the edges of the dough over the figs. Brush with egg wash. Sprinkle some raw sugar over the egg wash. Place the cubed butter over the figs.
6) Bake on a parchment lined baking sheet, in a preheated 350F (180 C) oven for 30-35 minutes, or until golden brown. Cool completely before serving.
Topping suggestions: drizzle of honey 🍯, dollop of whipped cream, scoop of ice cream
