Ingredients (for 4 servings)
• 4 medium apples (use your favorite variety, I love Gala).
• 3/4 cup water.
• 2 Tbsp lemon juice.
• 1/2 tsp vanilla extract (optional for extra flavor).
Directions
1. Wash, peel, and core the apples.
2. Then chop them into small pieces and place them in a saucepan or pot.
3. Add the water, lemon juice, and vanilla extract. Mix all the ingredients until combined.
4. Over medium heat, bring to a boil and then reduce the heat to low. Cover the pot and let simmer for about 15-25 minutes (depending on the variety of apples) or until the apples are soft.
5. When the apples are soft, mash them or use a blender to obtain a smooth texture of the applesauce.
6. Keep the applesauce in the fridge for up to 2 weeks (you can also freeze it). You can use it as an oil replacement in baking recipes (1:1) or as an egg replacer (1 large egg= ¼ cup unsweetened applesauce).
7. Additionally, you can use it as a snack or baby food.
