Maslenica or Masanca is Balkan pita that is made with layers of thin filo pastry and is one of the first pita that I learned from my mother in law.
Stolnjak or table cloth is normally used when making any pita. One trick that I noticed is to always use an ironed table cloth. This way, it makes it easier to stretch the dough.
Using this long rolling pin or what we call here oklagija, flatten the dough until it is thin enough for about a centimeter. You can use a regular rolling pin if you dont have one. Sprinkle some flour when it gets sticky.
Now, when it gets to this size, brush or apply some vegetable or sunflower oil and leave for 15 minutes. Make sure to close all door and windows to avoid the change of temperature in the room.
After 15 minutes, gently stretch the dough. You can use your palm or back of your hand to so you won’t make a tear.
Now, I have here a mix of melted butter and oil. Pour it to the stretched filo dough. Then fold one side up in thirds, pouring some oil in between.
Then, transfer it to this oiled baking dish while we do the other jufka.
Repeat the process just like the first one.
Bake in preheated oven at 200C for 30minutes or until top is golden brown.
After baking, splash some water and cover it the masanca. This will make it a bit softer.
This is best to eat with baked chicken or grilled meat. Or even as a substitute to bread and eat it with your favorite jam and cheese.

3 cups (435g) flour, sifted
(set aside about 2 tbsp for extra dusting)
2 tbsp oil
2 tsp salt
250-280ml warm water (approx.)
