UGH...This social distancing thing is really getting old!!! 5 long weeks of self isolation and no end in sight. Well I guess the silver lining is learning something new and exciting!! Let's learn to cook Cantonese shrimp chow mein today. Literal translation of chow mein is "stir- fry noodles". The original birthplace of this popular dish was Guangdong (Canton), China. So basically Cantonese chow mein is any dish cooked with veggies and/or chicken, beef, seafood, tofu served over pan- fried noodles. Gather your ingredients and let's get busy!!!
Cantonese Shrimp Chow Mein
Ingredients:
10 Peeled and deveined white shrimp (or any protein ie. chicken, beef, prok, fried tofu, etc.)
2 Cups (473 ml) Chinese broccoli (Gai lan), bok choy, napa, etc.
3/4 Cup (177 ml) Fresh sliced mushrooms
1/2 Cup (118 ml) Sliced carrots
1 Cup (236 ml) Peapods
1/2 Cup (118 ml) Sliced waterchestnuts
1 Cup (236 ml) Beansprouts
Optional: Bamboo shoots, onion, celery, cabbage
7 oz. (198 g) Steamed egg noodles
1/2 teaspoon (2.46 ml) Salt
1/2 teaspoon (2.46 ml) Sugar
1Tablespoon (4.8 ml) Oyster sauce
Pinch white pepper powder
1/2 Teaspoon (2.46 ml) Minced ginger and garlic
Dash Sesame oil
1 Cup (236 ml) Soup stock or chicken stock
Corn starch
Light soy sauce
Rice wine
Directions:
1. Place cut shrimp in a bowl and mix in 1/2 tablespoon light soy sauce, 1/2 tablespoon rice wine, 1/2 tablespoon corn starch and 1/2 tablespoon oil. Marinate for 2 hours or overnight.
2. Heat wok and add oil.
3. Put in ginger and garlic.
4. Put in shrimp (or beef) and stir fry till half done. Take out and place aside. Note: for chicken and pork, continue to cook with vegetable. And for tofu, deep fry till golden brown and add in at the end.
5. Put in main veggie (gai lan, bok choy, napa, etc) and waterchestnuts, bamboo choots, celery, etc.). Add in soup stock or water with chicken base.
6. Boil water in a pot and blanch steamed noodles for a minute. Drain and pan fry till brown and crispy.
7. Cook till tender. Add in shrimp (or beef), peapods, mushrooms, carrots, and beansprouts.
8. Put in all seasoning.
9. Thicken sauce with corn starch and water mixture.
10. Pour on top of noodles and serve.
