I love this gluten free cornbread! It is buttery, crumbly deliciousness. It is so comforting and perfect with a meaty chili. YUMMM!

Gluten Free Cornbread
Preparation time: 10 minutes
Cooking time: 25 minutes
Servings: 6-8
Ingredients:
½ cup cornmeal
½ cup corn flour
1 cup rice flour or all purpose gluten free mix
2 eggs
4 tbsp melted butter
2 tbsp honey
1 tsp baking powder
½ tsp baking soda
1 tsp salt
1 ½ cup buttermilk
1 tsp lard
Directions:
Preheat oven to 350ºF. Place a large cast iron pan inside the oven while you prep the other ingredients.In a bowl place the cornmeal, corn flour, rice flour, baking powder, baking soda and salt and mix to combine. Set side.
In a separate bowl mix together the eggs, honey, buttermilk and melted butter.
Pour the buttermilk mixture into the cornmeal mixture and fold together.
Carefully remove the heated cast iron pan from the oven. Grease with lard and pour the batter in.
Bake for 25 -30 minutes or until the top is golden brown and a toothpick inserted in center comes out clean.
Remove from the oven and let cool slightly before slicing.
