Cinnamon Swirl Banana Bread
For the Bread:
3 over-ripe smashed bananas
1/3 cup melted butter
3/4 cu sugar
1 beaten egg
1 tsp. vanilla
1 tsp baking soda
dash of salt
1 1/2 cups of flour
For the Swirl:
1/3 cup of sugar
1 Tbs cinnamon
Directions:
1. Preheat oven to 350. Butter and Flour a loaf pan.
2. Mix bananas, butter, sugar, egg, and vanilla together. Sprinkle baking soda and salt on top of banana mixture. Gently stir in flour. Don't over mix.
3. In a small bowl, mix together the sugar and cinnamon for the topping.
4. Add half of the batter to the prepared loaf pan. Sprinkle half or a little more than half of the cinnamon-sugar mixture all over the batter in the pan. (I like to make swirls, but that is up to you.) Add the rest of the batter, and the rest of the cinnamon sugar on top of that.
Bake for 50-60 minutes. Remember if you want it not so dark, use less time. If you are using a different size loaf pan adjust the time accordingly.
