INGREDIENTS
1kg beef rump
2 ox tail
200gr pork fat or oil
1 slice smoked lard
2 carrots
2 pepers
2 large onions
100gr tomato puree
2 tbsp sweet Paprika
1 tbsp hot Paprika
1 tsp salt
1L veg stock
100 gr celeriac
1 small parsnip
3 potatoes
100gr sweet pepper paste
PREPARATION
In a large pot put all the vegetables except the potatoes and cook them in oil until they start being soft ish (all the vegetables need to be cut small). After start adding the meat and the ox tails. Cook everything and mix from time to time. When the meat change the colour start adding the spices,mix all very well and add the stock. Cover with a lid and leave it on small heat untill the meat is cooked . After that add the potatoes peeled and cut in chunky pieces, cook for another 20-25 min and add the pepper paste and the tomato puree. Cook it for another 10 min on medium heat and is ready. Yoy can serve it with some nice pickles on the side ,rice or just bread! It is a delight!!!
I cooked maybe the most famous Transylvanian dish, Beef Goulash!For sure one of the most delicious dishes from around the world,i would say it can compete easily with the French Beef Bourguignon or any other beef stew!
