I haven't made this in a while, so I was craving some Filipino chicken adobo. This is one of my go-to meal preps since I can make a lot at once.

Ingredients:
- 10 chicken thighs
- 1/4 cup dark soy sauce
- 1/2 cup regular soy sauce
- 1 1/4 cups rice vinegar
- 1/2 cup of water
- 3 tbsp sugar
- 1 tbsp peppercorn
- 4 bay leaves
- 10 cloves of garlic
Recipe:
1. Combine dark soy sauce, regular soy sauce, rice vinegar, water, sugar, peppercorn, bay leaves, and garlic in a mixing bowl.
2. Add the chicken thighs to the bowl and let it marinate overnight.
3. On high heat, sear each side of the chicken thighs for 3 minutes in a pot and place them to the side.
4. Add the marinade to the pot and add the chicken back to the pot. Let the pot boil.
5. Once it's boiling, turn to low heat. Simmer covered for 1.5 hours.
6. Uncover the pot and boil the sauce to reduce it to the desired consistency.
7. Serve with a bowl of rice.
