Chef Maurizio Bocchi creates four classic Italian recipes using Galbani cheese. The first dish is cappellacci with dolcelatte filling and walnut sauce. The second dish is mozzarella in carrozza with orange marmalade (Naples traditional fried mozzarella). This is followed with a mozzarella, fresh peaches, compressed strawberry and basil jelly, with an extra virgin olive oil biscuit, and then for dessert, the classic tiramisu in a chocolate cup, with mascarpone, chocolate, crushed pistacchi di bronte and extra virgin olive oil mousse.
