1. Boil your potatoes. Place your sweet potatoes into a large pot, fill with enough cool water to cover, then place over high heat and boil for about 40 minutes or until fork-tender. Once done, empty the pot of hot water and sit the potatoes in a pot of cold water to chill.
2. While the potatoes are boiling create your candied sauce. Melt your butter first in a microwave on high for 30 seconds if it’s not already room temperature. Then add your 1 cup of brown sugar and all the other ingredients (syrup, honey, vanilla, butter, cinnamon, nutmeg, and salt) to whatever dish you’re going to bake the sweet potatoes in, then stir everything in well.
3. Once the potatoes have chilled, peel the skin, and cut them into whatever size shapes you like
4. Preheat oven to 350 degrees.
5. Place the sweet potatoes into the dish of candied sauce, sprinkle remaining 2 tbs of brown sugar over them, and then place them into the oven.
6. As the sweet potatoes are cooking, top them with the candied sauce (if there are some potatoes that are tough/hard in the center, press them below the candied sauce).
7. Bake for 1 hour then remove from oven and serve.
