Pork Belly Cinnamon Rolls on the Meadow Creek COMBI42 🔥🤤
Enjoy the indescribable marriage of pork and buttery, sweet cinnamon with an amazing smoke flavor. This is the recipe you'll be writing home about!
Ingredients:
✅ Half (5-pound) pork belly, skin off
✅ 1 cup brown sugar
✅ 1 tablespoon cinnamon
✅ Lane's Spellbound rub
Glaze:
✅ 1/2 stick butter
✅ 1/2 cup maple syrup
✅ 1/4 cup brown sugar
Instructions:
✅ Butterfly the pork belly from the side (along the long edge). Leave the two sides attached and spread the belly out flat. (For this recipe, we're using a 10-pound belly and cut it in half.)
✅ Mix the cinnamon with the sugar and spread it over the entire surface (inside).
✅ Sprinkle a thin coat of Lane's Spellbound rub over the sugar.
✅ Roll the belly up, starting with the shortest edge. The roll will be roughly 12" long.
✅ Tie the roll with butcher string, and set it in the fridge for 30-60 minutes. Put a string every 2", starting 1" from the end.
✅ Slice the roll into 2" pieces. This will probably yield 6 rolls.
✅ Smoke the rolls at 225 degrees F for 2-3 hours, or until the outside edges develop a nice color and some of the fat is rendered.
✅ While the rolls are cooking, combine the glaze ingredients in a small pot or pan over medium heat, stirring frequently until the sugar is dissolved.
✅ Transfer the rolls to a pan and glaze them, then cover and put them back in the heat for another 45-60 minutes or until a thermometer probe slides through with little resistance. Times will vary on the size of the pork belly and your specific smoker.
✅ Spoon some of the glaze from the pan over the rolls and dust the tops of the rolls with Lane's Spellbound rub. Remove them from the pan and set them back on the smoker grate for 15 minutes to set the glaze a bit.
✅ Let them cool a bit and serve!
