Ingredients:
||Chicken||
6 chicken thigh
(Masala Mix)
2tbsp coriander powder
1tbsp garlic powder
1tbsp fennel seed powder
1tbsp smoke paprika
1tbsp chili powder
1tbsp cumin powder
1tsp white pepper
4tsp of salt
4tbsp of olive oil
Little water
||Rice||
2tbsp of ghee
2 cinnamon stick
2 staranise
5 cloves
5 cardamom
2 bay leaves
3 large red onions
1 inch ginger
6 cloves of garlic
1 large tomato
--------------------------
(Masala Mix)
2tbsp coriander powder
2tbsp fennel seed powder
1tbsp smoke paprika

1tbsp cumin powder
1tsp white pepper
4tsp of salt
4tbsp of olive oil
Little water
--------------------------
800ml water
6tsp of salt (adjust accordingly)
700g basmati rice
1 carrot shredded
||Garnish||
2 green chili
Fried cashew nuts and raisins
Coriander leaves
Lemon slices
Method:
First get all the masala mix and set it a side. Then add the ghee, spices, onion, ginger/garlic and tomato. Cook for 5mins then add the masala mix and cook for another 5mins. Add the water in and include the chicken together with salt. Mix it all really well and cook the chicken for 20mins.
Once done, remove the chicken. Then add the rice, carrot and salt. Mix them all really well and cook the rice till its ready.
While the rice is cooking, marinate the chicken with the masala mix and pan fry it till its completely cooked. Then we are ready to serve.
