Tips for finding ingredients of Kunafe. Substitute for cheese.
The hardest thing about making kunafah is finding the ingredients. So in this video we have tried to use easily available ingredients that you can get in your nearby grocery store. White Akawi cheese made in the Middle East used for Knafeh is harder to find. Since the traditional cheese is difficult to find for Kunafa, you can substitute with amul cream, mozarella cheese, and amul cheese spread to get a rich authentic flavour.
Alternatives for Kunafah dough:
You can replace the kunafa dough with vermicelli or sewai. We have tried the recipe with roasted sewai or roasted vermicelli and turned out pretty amazing with the authentic taste.
Breadcrumbs shredded in a food-processor can also serve as a good alternative.
Tips for shredding Kunfa dough/phyllo dough:
Shred the dough frozen, or let it thaw before you shred it. You can even use a food processor to shred the thawed kunafa dough to a breadcrumb-like texture, and the kunafeh made of it is called Soft kunafa or (Kunafeh naemeh).
Make ahead tips for (كنافة) Kunafah
Make the syrup and the milk pudding, let them cool down then refrigerate. Pudding can keep up in the fridge for 5 days and syrup for months. Just make sure to cover the pudding directly with plastic wrap so it will not develop a skin. Refrigerate until you are ready to use it. Also, unbaked knafeh freezes very well. So make it, freeze it then when you want to serve it, let it thaw and then proceed with the recipe.

Ingredients to make Delicious Kunafa Recipe:
· 500 gram kunafa dough/ vermicelli broken ( Seviyan used for making kunafa are thin)
· 1 cup Butter melted
· ¼ cup Pistachios chopped
For filling of kunafa
· 1 ¼ cup Milk
· 1 cup Cream (amul crème)
· 2 teaspoons Corn flour
· 1 teaspoon Rose Water
· Amul cheese spread- 1/4 cup
· ½ cup Mozzarella cheese grated
· 2 tablespoons sugar
· ¼ tsp vanilla essence
· ½ tsp rose water
For Sugar Syrup:
· 1/2 cup Water
· ½ cups White Sugar
· 1/2 teaspoon Lemon Juice
