This rice was bussin! Carrot Rice !
2 cups cooked rice, boiled with 1 teaspoon of turmeric powder
2 tablespoons olive Oil
4 garlic cloves, minced
2 large carrots , shredded
1 red bell pepper, chopped
2 celery ribs, chopped
2 packs massel seasoning or you can use goya vegetable and salad seasoning
1/2 teaspoon turmeric powder
1/2 teaspoon salt
1/2 teaspoon white or black pepper
4 Pimento Peppers, finely chopped ( substitute with mini sweet peppers)
2 scallions,chopped
4 sprigs cilantro & parsley , chopped
In a deep pot on medium high heat sauté garlic for about 30 seconds, then add carrots , bell peppers and celery, stir fry for about 2 minutes , stirring constantly.
Add seasonings, turmeric, salt , black pepper & pimento peppers Stir to combine !
Add Rice, combine everything together , taste and add more salt if needed.
Lastly, add scallions, cilantro and parsley , mix it up ! Turn your heat off !
Serve and enjoy!
Note: You can also add about 1/2 teaspoon turmeric powder in the rice , along with about 2 tablespoon of golden ray butter, but it’s totally optional !
