These will be your new favourite whole food oil free crackers to make at home. Super cheap and packed with fibre, iron, protein, selenium & zinc! I had to pair it with my fave super spinach ricotta dip 🔥
Ingredients
Crackers:
3/4 cup red lentils, soaked in boiling water
3/4 cup water
Optional - 2 cloves of garlic, dried basil & salt
Spinach ricotta:
1/2 block of tofu, 400g
4 cups of spinach
1/4 cup plant milk
1 tsp salt
1/4 cup nutritional yeast
1/2 tsp garlic salt
1. soak red lentils in boiling water. Drain and add to a blender with water and blitz until smooth. Spread on a lined baking tray and bake for 30 mins at 180 Celsius.
2. Cut into any shape you like and make sure they are not touching. Bake again for 20mins or until golden brown and crispy!
3. Add dip ingredients to a food processor and blitz until smooth. Dunk and enjoy!
