Something from my grandma's kitchen, Eggplant Parmesan! But this version I make without an oven! I'll show you how to make Eggplant Parmesan in a toaster. Also included is a basic tomato sauce, the basic frying technique and assembly. It goes great on pasta, in a sandwich on Italian bread or just as is! Hope you give it a try!
If you have neither an oven nor a toaster, you can make it in a frying pan too! The method is the same as how I make chicken parmesan:

Ingredients 3-4 servings:
5-6 Japanese eggplant or 1 large eggplant
1 onion
4-6 cloves of garlic
3 cans of cut tomatoes
1 tsp of crushed red pepper
1/2 cup of red wine
Flour & Eggs for breading
Melting cheese (mozzarella)
Parmesan cheese
